Ingredients:
• 1 cup quinoa
• 2 cups of broth
• 2 carrots
• 1/2 head of broccoli
• 1/2 red pepper
• 1/2 yellow pepper
• 3 cloves of minced garlic
• 2 tablespoons olive oil
• lemon juice
Directions:
1. Boil broth then add quinoa, then turn down to simmer and cook for 15 min. Then turn off heat and let stand for 5 min.
2. Cut carrots, broccoli, and peppers into bite size pieces.
3. Cook broccoli and carrots in a microwave safe bowl with lid and fill with 3/4 water for 5 minutes. Put olive oil, garlic and cut peppers in a saucepan at medium high heat. Sauté peppers and garlic. Then add cooked broccoli and carrots and sauté a couple of minutes longer.
4. Mix quinoa and veggies together and add lemon dressing for taste.
