Creamy Green Beans & Mushrooms with Parmesan Bread Crumbs
Hands on time: 30 min
Total time: 50 min
Serves: 6
Ingredients:
• 1½ lbs. fresh green beans, trimmed
• 2 tbsp. butter
• 8 oz. sliced baby bella mushrooms
• 1 tsp. dried thyme
• ½ tsp. kosher salt
• ¼ tsp. garlic powder
• Freshly ground pepper, to taste
• 6 tbsp. cream cheese
• ½ cup panko bread crumbs
• ½ cup grated Parmesan cheese
Directions:
1. Preheat broiler.
2. Bring a pot of well-salted water to a boil; add beans and cook until just tender, 8-10 minutes.
3. Meanwhile, melt butter over medium heat in a large, oven-proof skillet. Add mushrooms, thyme, salt, garlic powder and pepper and cook, stirring frequently, until the mushrooms are golden and tender, about 10 minutes. Stir in cream cheese until evenly distributed and melted.
4. Use a slotted spoon to transfer beans to the skillet and stir to coat adding a bit of cooking liquid if need to thin the sauce. (Can be made ahead to this point; reheat in the skillet before proceeding.)
5. In a small bowl, combine bread crumbs and Parmesan; sprinkle evenly over the beans. Transfer skillet to broiler and broil until topping is golden brown, 2-3 minutes. Serve immediately, refrigerate any leftovers.
